Orange Marmalade

Take the same weight
of sugar as of oranges cut
them in half squeeze out
the juice and strain it.
Boil the peels in water
until they are tender
drain them and scoop the
pulp out leaving the rind
rather thin then cut them
fine. Boil the juice of the
oranges with the sugar.
Skim it then add the
peels and finish boiling
till it becomes quite stiff.
When cold cover them over
with butter papers and tie
down. Keep them in a dry
