Rice Cake

1/2 lb Rice flour
Four eggs
1/2 lb White sugar
pounded and sifted
1 teaspoonful of baking
A few drops of essence
of lemon
Beat the eggs for ten
minutes, add the sugar
beat again for ten
minutes, then add the
flavouring and rice
flour, finish mixing the
baking powder with
the flour and beat five
minutes more.
Bake in a well buttered
mould in a moderate
heated oven.
NB Always break each egg into
a cup separately as the least
taint spoils the whole.
