To Preserve Siberian Crabs

Gather them with the
stalks on, make a thin syrup;
when it is near cold put in
the fruit and set it over
a very slow fire; when
just hot, set them by;
next day do them gently
again, the third day just
simmer them to scald
them through, when cold
put them in glasses or pots,
if the syrup is not thick
enough, drain it from the
fruit and boil it again
if for a dessert to look
fine, it should be
doubled refined sugar
a fresh syrup to keep
them in.
