Fricasseed Chicken


1 Chicken, 1 medium sized onion
1/2 medium sized carrot 1/2 medium
sized turnip 1 quart milk a
pinch clove and mace 2 peppers cored (?)
piece bay leaf pinch thyme
3 oz Butter, 1 oz flour, tiny piece lemon peel
Skin chicken, cut into
portions, place in pan cobver with milk
add flavourings, vegetables, salt, simmer
1 or 1 1/2 hours. Take chicken out on to
a hot dish. Mix flour to a smooth
paste add to milk add butter stir
until sauce boils. Strain and pour over
chicken
This is a white dish or
may be garnished with small
(fried) black mushrooms.
