Celery Sauce for Boiled Fowls


Take a head of fine
celery, wash it clean, cut
it in small bits, and
boil it in a little water
till quite tender; then
add a little beaten mace
lemon peel, grated pepper
salt and a little nutmeg
a good piece of butter
rolled in flour, boil it up
Put some in a dish
and the other in a tureen
some lemon pickle
may be added if
agreeable
