Simnel Bury [presumably Bury, Lancashire]

1 lb of Flour
6 oz of Butter
8 oz of Sugar
4 oz of Lemon
3/4 of Currants
Almonds spice carbon [Bicarbonate of Soda]
1 Egg mixed with milk

[This looks like someone else's writing but later recipes
in the book are still in Elizabeth's handwriting. It might
be her daughter in law, see Brook's Snap.]

I believe that 'carbon' would refer to bi-carbonate of soda - a raising agent like baking powder.

In the Bury recipe, it is Almonds, not lemons.
