Macaroons


Blanch half a pound of
Jordon [1] almonds, beat them
fine in a marble mortar
with some orange water;
then add half a pound of
loaf sugar; pounded and
sifted mix all together
with the whites of four
eggs well beat; lay them
on wafer paper and sift
sugar over them.
The[y] must be baked in a
moderate oven.
